It's that time of year when I shed a tear or two. The summer has gone, the nights are drawing in, the raincoats have been dug out of the wardrobe............... What better than a bit of pickling to put a smile on your face and a tear in your eye and see you through the dark winter months! It is an annual event in Sunny Rhyl HQ and this year is to be no different........... It was off to the local farm shop, Min-Y-Morfa to buy everything I needed for this years pickling session. I bought.......... 4lbs of Pickling Onions 5Ltrs Spiced Vinegar 10 Jars
The only other ingredient required is some of my homegrown chilli's to spice things up a bit. With everything in place, next step is to find a few hours to peel the onions. Pickle on!!!!!!!!!!!! To be continued................... Update 15/11/2006 I spent 3 hours last night peeling the onions. A strangely theraputic experience! The peeled onions were placed in a brine solution for 24hrs. I picked the last of the summers Chilli's and added them to the salted water.
After an overnight soak, the onions and chilli's were transferred to the sink to be washed in cold water.
Straight out of the cold water and patted dry with kitchen towels.
Having sterilised the jars and lids in the dishwasher, they were dried in the oven. Next it was simply a case of filling the jars with the onions and chilli's. Some black peppercorns were added to a few of the jars.
Finally, the spiced vinegar was filled to the brims and the lids secured tightly.
All that is left is to store the jars in a cool dark place and they should be ready just in time for Christmas :) Pickle On!!!!!
